Innovation Kitchen will offer an Earth Day special on Thursday, April 11, from 4:30 p.m. to 6 p.m. Participants will learn how to cook and live sustainably.
The menu includes:
- Seasonal salad with green onion vinaigrette
- Grilled stuffed zucchini boat
- Sunflower seed risotto with grilled portobello mushroom

At the event, student Katie Ruffino will share recipes from her personal cookbook. Ruffino is an Instagram food blogger—last semester, she shared her journey with food in college.
